Healthy Cheeseburger Pie

This HKI original features a healthy cauliflower crust instead of a regular pie crust. This is one that everyone will enjoy and will be asking for seconds!

Healthy Cheeseburger Pie
Ingredients:
    • 2 Cup(s) cauliflower, cooked
    • 1 Tablespoon(s) panko bread crumbs
    • 1 egg(s), lightly beaten
    • 1 1/4 Cup(s) cheddar cheese, shredded; divided
    • 1/2 Ounce(s) mozzarella cheese, shredded (about 1/4 cup)
    • 1/4 Cup(s) Parmesan cheese, shredded
    • 1/2 Teaspoon(s) ground oregano
    • 1 Teaspoon(s) dried parsley
    • 1 Tablespoon(s) extra virgin olive oil
    • 1/2 Lb(s) lean ground beef
    • 1/2 Lb(s) lean ground turkey
    • 1 onion(s), small, chopped
    • 2 Pinch(s) salt
    • 2 Pinch(s) fresh ground black pepper
Prep Notes:

A few prep options exist for this meal.  It could be made during prep and simply left to bake during the weeknight.  The cauliflower dough could be made during prep to reduce the time and steps to pull this together during the week.  Finally, at minimum the cauliflower can be cleaned and cut and the cheeses measured out and stored in an airtight container until ready for use.

Directions:

Dough:

  1. Rice, puree, or finely chop the cauliflower adding the Panko bread crumbs to dry out the cauliflower. In a large bowl add the egg, oregano, parsley, a pinch of salt and pepper, the processed cauliflower, mozzarella, Parmesan, and 1⁄4 cup of the cheddar cheese, stir until well combined and it has the consistency of leftover mashed potatoes.

Pie:

  1. Preheat oven to 425°F.
  2. Heat the oil in a medium skillet over medium-high heat. Add the onions, stirring for about 1 - 2 minutes to sweat. Add the ground beef, ground turkey, and a pinch of salt and pepper and brown until the meat is no longer pink on the inside and onions are soft. Remove from heat and drain and strain any liquid from the pan.
  3. Place the drained meat and onions in the bottom of the pie pan then cover with the remaining cheddar cheese reserving 1 to 2 tablespoons.
  4. Place the cauliflower dough on top of the cheese and spread evenly with a spatula to cover the entire pie. Sprinkle the remaining cheddar cheese on top of the cauliflower dough.
  5. Bake in the oven for 20 - 25 minutes. Remove and let cool for about 5 minutes before serving.
