Chicken Taco Naan Pizzas

This dish couldn't be easier to pull together.  Cook your chicken in advance and you'll have a pizza on the table in less than 10 minutes.

Chicken Taco Naan Pizzas
Ingredients:
    • 4 whole wheat Naan, or original Tandoori Naan
    • 1 Cup(s) salsa, plus more for serving
    • 1 Cup(s) mozzarella cheese, shredded, divided
    • 1 Cup(s) black beans, no-salt added, rinsed and drained
    • 1 Cup(s) frozen yellow corn, thawed
    • 2 chicken breast(s), grilled, frozen, boneless, skinless, thawed and chopped or sliced
    • 1/4 Cup(s) fresh cilantro, chopped
    • 1 Teaspoon(s) extra virgin olive oil
Prep Notes:

Poach or cook chicken during prep time.

Directions:

  1. Preheat oven to 400°F
  2. Lightly drizzle olive oil on each piece of bread.
  3. Spread 1/4 of the salsa over each naan and sprinkle with 1/4 of the cheese. Top each with 1/4 of the beans, corn, and chicken and bake until crust is crisp and cheese is bubbly and naan is crisp, about 5 - 7 minutes. Sprinkle with cilantro, cut into wedges and serve.
